These flattened logs of pure white goats milk are coated with a thin natural rind that develops over a layer of penicillin and ash. The dense and bucky center gradually softens towards the rind, where a thin layer of cream can develop when aged properly. The big and bold flavors are filled with wet stone and dry hay, with an undeniable kick of goat throughout. A great cheese for any goat lover. A Spanish original that pairs lovely with a white Rioja.
