It was easy to celebrate the end of 2016. Last year brought a handful of substantial changes, and we’ve got a lot slated for the new year. At the Bedford Cheese Shop, 2017 brings focus on creativity, positive energy, and strong communities.
After 10 years at the corner of Bedford Avenue and North 4th Street, we relocated to a bigger and brighter shop just down the block. We’re stoked on the room we have to turn around - and about the growth that has already happened.
We opened 265 Bedford Ave with a full menu of housemade baked goods, upped our sandwich game, and expanded our prepared food options. At the end of November, Marisa Gibson took over as the Head Chef at both locations. Marisa comes to BCS from the Italian food and vegetable-focused kitchen at Vic's. But she learned to cook at The Spotted Pig, when in 2006, "I heeded the advice of Sally Brompton's horoscope column in the New York Post, which said: 'There's something you've been meaning to do - do it today!' So I headed straight to The Spotted Pig with a letter asking April Bloomfield if I could work for free in her kitchen in the evenings after my day job as a teacher. She agreed, and taught me how to cook."
Marisa is getting settled here and is "excited to be at BCS curating simple bright and zingy salads with nods to favorite flavors from across the globe."
Three of her creations are already on the menu: Watermelon Radish and Japanese Sweet Potato with Serrano-Lime Creme Fraiche is all about contrast - crunchy radish against creamy salt-roasted Japanese sweet potatoes; serrano peppers and lime round out the rich creme fraiche dressing. For something heartier, we’ve got a Farro Salad with Roasted Squash and Poached Persimmon, garnished with toasted almonds and mint. If earthy and savory is your thing, the Roasted Fennel Salad with Celery Root and Olives will make the cold winter months bearable: it involves every part of the fennel plant, orange zest, and a vinegary kick.
