It might come as a surprise, but white wine is a natural pair for a variety of cheeses. The often acidic and minerally qualities that manifest in white wines lend themselves well to complex flavors and rich textures.
But white wine, like cheese, is far from simple: Sancerre tastes like limestone and lemons while Riesling is sweet and fruity and Vinho Verde tends bright and effervescent. Then there is California with its Chardonnay and disruptive spirit. Finding those pairings that elevate both the cheese and the wine to new heights takes time (and a lot of trial and error).
A BCS white wine and cheese pairing class is an educational adventure into the practice of pairing - and an introduction into how milk makes cheese, how grapes make wine, and how to make the most of the pairing possibilities. We’ll taste a flight of wines alongside a flight of cheeses selected to complement. Come hungry and curious – we’ll be traveling the world through taste.
